Culinary Delights by Our Superb Chef
Attracted to Concord's Colonial Inn by its welcoming intimate atmosphere, Executive Chef Leo Kremer enjoys speaking with customers and invariably receiving their compliments. Kremer's culinary team includes Executive Sous Chef Robert Smith and Stewart Salguero who direct over 20 line cooks daily. Each night there is the creative challenge of presenting four dinner specialties that attract the eye and appeal to the palate. Among these specialties are striped bass with champagne sauce garnished with champagne grapes, stuffed lobster tail with tarragon cream, Kobe beef steaks with roasted garlic butter, and Asian influenced tuna with peanut sesame noodles.
There are the signature dishes of the Colonial Inn as well which include potato crusted haddock, prime rib, chicken pot pie and the lighter fare of Caesar salads with the customer's choice of grilled chicken, salmon, or shrimp. The sirloin steak, sirloin tips and skirt steak are all natural meats without additives and hormones and have become a popular choice for patrons. While the meat and fish are center stage on the plate, Kremer and his team know the importance of selecting daily the accompanying fresh produce.
Kremer is a talented pastry chef, a position that he specialized in at the Colonial Inn from 2000 through 2003, earning the first place award in the 2003 St. Marks Annual Chocolate Festival and the "People's Choice Award" in 2002. He continues baking for the daily menu as well as for special celebrations including wedding cakes for the Colonial Inn's many wedding receptions. When Kremer began his culinary career at the Culinary Institute of America in Hyde Park, his chef instructors presented him with the most Outstanding Baker Award in his graduating class. Desserts at the Colonial Inn are indeed worth waiting for and a splendid finish to a meal.
Prior to joining Concords Colonial Inn in 2000, Leo Kremer was a chef at the Palm Restaurants in Philadelphia and Boston
